Kitchen Handis - Give your Food the Authentic Indian Flavour

For some of us, food is our passion. Right from the delicious aroma tantalising our nostrils to the different flavours playing a game of seduction with our tongues, we enjoy every dish till the last bite. A scrumptious meal can take us away from the perils of day-to-day life and transport us to a land of pleasure. But along with enjoying good food, we are also particular about how it is cooked. A variety of vessels are a part of our kitchen - tawas, kadais, pans, handis and more.

The taste and flavour of a dish depends on the ingredients that go into its making, the proportion of the ingredients and the way it is cooked. The method of cooking determines the taste of the dish to a large extent - the amount of time it is cooked for and the vessel it is cooked in determine its flavours. For the authentic Indian flavour in your dishes, cook food in a kitchen handi.

What is a kitchen handi?

Handis have existed since ancient times. They are deep, wide-mouthed cooking vessels which are usually used to make dishes with a rich flavour. Less water is used in the preparation procedure. The lid of the vessel holds water on top and the underneath surface condenses the steam that rises from the food inside. A handi could come with one long and one short handle or with two short handles.

What kind of dishes can be cooked in a kitchen handi?

A handi is usually used to make biryani and the biryani itself is called handi biryani. Traditionally, it was also used to make pickles. Other delicious dishes that you could cook in this vessel are pulav, chicken and mutton curries and more. A handi is mainly used to cook Pakistani, Punjabi and Bengali dishes.

Handis during the olden days

In the ancient times, kitchen handis were made from clay or terracotta. They were spherical in shape, had a thick bottom and a narrow neck which flared out to form a broad rim. Clay saucers were used to cover these vessels while cooking. Earlier, these vessels did not have handles. Hence, they had to be lifted by grabbing the rim.
